Pancake Bacon Dippers with Whiskey Syrup!

The Pancake Bacon Dipper photo has been all over my Facebook newsfeed. All my friends kept sharing it so I took it as a challenge to make it the “Jersey” way.

Here’s What you Will Need:

Pancake Recipe (allrecipes)

1 1/2 Cup Flour

3 1/2 Tsp Baking Powder

1 Tsp Salt

1 Tablespoon Sugar

1 1/4 Milk

1 Egg

3 Tbsp Melted Butter

Empty Ketchup Squeeze Bottle

8 Strips of Bacon

Whiskey Syrup

3 Tbsp of Favorite Whiskey (I used William Lawson)

1/2 Cup Maple Syrup or Pancake Syrup

1 tsp of Butter

Making the batter:

In a large bowl sift flour, sugar, baking powder, and sugar. Stir until dry ingredients are well combined. In a measure cup add milk, the egg, and melted butter. Mix well in the measure cup until combined. Then add the wet ingredients to the dry and mix until well incorporated. The batter may have lumps but it will come out fine in the end.

Take a funnel and place into the squeeze bottle. Then pour the batter into the funnel. Once all the batter is in the bottle close and place in the fridge until needed.

**Note** You can always use the prepackaged pancake mix if it is easier but the homemade pancakes make this recipe so much better.

Fry eight pieces of bacon on low heat for about 2 minutes on each side. You want the bacon to be crispy but still pliable. After all strips have been fried sit aside until needed.

Coat a large skillet with butter then place on medium low heat. Once you see the butter is bubbling take a strip of bacon and place in the skillet. Take the pancake batter and squeeze it over the top of each piece of bacon. Make sure you spread the bacon strips apart so you won’t have a hard time flipping. I made two at a time.

When the edges start to brown and the craters start from flip them over (2-3 minutes). Cook on the other side for another 2 minutes. Continue this method until complete.

Making the Syrup:

In a small sauce pan add butter, whiskey, and syrup. Cook on low heat until bubbles. This will take about 3-5 minutes.

In my opinion this dippers were YUMMA! You should try them! The awesome thing about these breakfast delights are everyone can eat from the same plate. Easy clean up.
